Algunos eran trashumantes, para buscar los mejores pastos de los Pirineos en verano y el clima m\u00e1s ben\u00e9volo de la llanura en invierno. El ganado vacuno fue trashumante durante muchos siglos. Los reba\u00f1os de cabras eran m\u00e1s estables. Los quesos madurados quedaron muy reducidos a las zonas de monta\u00f1a, forzados por las necesidades del transporte y la conservaci\u00f3n. Parad\u00f3jicamente, dietarios y recetarios de hasta el siglo XIX se refieren a menudo al uso de quesos secos y viejos en la cocina y la mesa. Afortunadamente, a partir de finales del siglo XX se recuper\u00f3 la elaboraci\u00f3n de quesos madurados, lo cual ha tenido una incidencia muy positiva en el medio ambiente y la recuperaci\u00f3n del medio rural. Hoy en d\u00eda hay unos pocos ganaderos elaboradores de quesos de diferentes tipos, pero tambi\u00e9n muchas colaboraciones directas entre peque\u00f1os ganaderos independientes y artesanos del queso. Algunos han recuperado el cultivo del cardo para cuajar el queso y, en particular, para elaborar el reques\u00f3n \u2014de trapo en El Baix Empord\u00e0 o de olleta en L\u2019Alt Empord\u00e0\u2014, el l\u00e1cteo m\u00e1s tradicional y popular. Tradicionalmente, se envolv\u00edan con trapos de hilo recuperables, pero, por razones de seguridad alimentaria, fueron sustituidos por trapos de celulosa. Del mismo modo que en esta mas\u00eda de Siurana d\u2019Empord\u00e0 trabajaron para recuperar la raza ripollesa, tambi\u00e9n han recuperado el cardo mariano. De color blanco brillante, su reques\u00f3n tiene un sabor intenso a leche fresca. El Pla d\u2019Alba es un queso de leche cruda de cabra, de pasta blanda y piel con moho de color marfil, con aroma de setas frescas y mantecoso en boca.
