Casi en paralelo, nace la salaz\u00f3n, como primer m\u00e9todo de conservaci\u00f3n en las temporadas de sobreabundancia de pescado, especialmente de grandes cantidades de sardina, caballa, at\u00fan y anchoa; garantizaban alimento y ventas para las \u00e9pocas en las que disminu\u00edan las capturas o en las que los temporales imped\u00edan salir. Hay documentadas salinas en el golfo de Roses, adem\u00e1s de almadrabas en el cabo de Creus, en La Mar d\u2019Amunt y en Les Canyelles Grosses. El Alfol\u00ed fue operativo hasta el a\u00f1o 1869, cuando acab\u00f3 el monopolio real de la sal. La Costa Brava es todav\u00eda territorio de salazones. Con eso y con todo, L\u2019Escala es la poblaci\u00f3n que conserva m\u00e1s f\u00e1bricas y, por lo cual, sus anchoas en salmuera son muy populares; las sardinas de caixeta (cajita) son una deliciosa reliquia gastron\u00f3mica de la localidad, que compiti\u00f3 durante muchos a\u00f1os con los arenques, tambi\u00e9n sardinas, pero prensadas. Los arenques se distribu\u00edan en cajas de base circular y, las sardinas, una semiconserva, en caja rectangular.<\/p>\n<p style=\"text-align: center;\">En la actualidad, las conservas marinas de la Costa Brava son m\u00e1s dependientes de la cadena del fr\u00edo y de la pasteurizaci\u00f3n que no de la sal, y ya no se limitan solo a conservar pescado azul. En la antig\u00fcedad, se distribu\u00edan en grandes tarros de cristal, se ven\u00edan por unidades y cada cual en su casa les limpiaba la sal debajo del grifo, separaba los filetes y las ali\u00f1aba con aceite. Despu\u00e9s de dejar madurar la anchoa en salmuera, sin cabeza ni tripa, un m\u00ednimo de seis meses, le sacan la espina central y envasan sus filetes en aceite de oliva.
