Precisamente, dos de los primeros restaurantes con estrella eran del Empord\u00e0, el Hotel Duran y el Motel Empord\u00e0, de Figueres, que obtuvieron la distinci\u00f3n en 1974, mientras que El Bulli, de Roses, la logr\u00f3 en 1976. Ya en 1976 se intent\u00f3 iniciar la producci\u00f3n de <em>foie-gras<\/em> de pato, pero no fue hasta 1983 cuando Coll Verd dio el paso definitivo, comenzando con tan solo diecis\u00e9is patos adquiridos a otros pioneros que, pese a sus esfuerzos, no tuvieron \u00e9xito.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">Constituida como cooperativa, Coll Verd ha celebrado cuarenta a\u00f1os de trayectoria consolid\u00e1ndose como empresa l\u00edder en Catalu\u00f1a \u2014donde controla m\u00e1s de la mitad del mercado\u2014 y como la segunda mayor productora a nivel estatal. La producci\u00f3n del sector no se limita a proveer al mercado de h\u00edgados gruesos, grasos y ufanos, que m\u00e1s o menos pesan medio kilo, sino tambi\u00e9n a transformar el pato para aprovecharlo al cien por cien. La singular manipulaci\u00f3n a que lo someten hace que se transmitan perfectamente las caracter\u00edsticas del producto originario, por lo que hay que escoger la mejor materia prima. Elaborar este foie-gras es un trabajo de orfebrer\u00eda: hay que quitarle todos los vasos sangu\u00edneos, limpiarlo, salpimentarlo, condimentarlo y cubrirlo de sal para conseguir una curaci\u00f3n ligera. A la moderna nave llegan los voluminosos h\u00edgados grasos y los patos reci\u00e9n sacrificados en el matadero que tienen en las granjas, donde todos los polluelos entran con un d\u00eda de vida. El foie-gras entero semicocido, elaborado al ba\u00f1o mar\u00eda con sal, pimienta, especias y, en este caso, vino de Oporto, es una de las formas m\u00e1s universales de consumir el h\u00edgado graso de pato o de ganso. Solo o con pan tostado, patatas asadas o trufa, para terminar arroces y pastas, como relleno o con confituras, sea de higos o de c\u00edtricos, el semicocido es
