Les oliviers mille\u0301naires te\u0301moignent de l\u2019anciennete\u0301 de l\u2019industrie de l\u2019huile, des vestiges confirmant sa pre\u0301sence de\u0301ja\u0300 a\u0300 l\u2019a\u0302ge du bronze. Paradoxalement, ce n\u2019est qu\u2019en 2008 que voit le jour l\u2019Appellation d\u2019Origine Prote\u0301ge\u0301e (AOP) Oli de l’Emporda\u0300, couvrant l\u2019Alt et le Baix Emporda\u0300, trois communes du Pla de l\u2019Estany et cinq du Girone\u0300s, malgre\u0301 les vestiges vivants de cette culture dans la Garrotxa et le Montseny, ou\u0300 l\u2019on s\u2019efforce de\u0301ja\u0300 de faire renai\u0302tre d\u2019anciennes varie\u0301te\u0301s.<\/h6>\n

La plus typique et la plus cultive\u0301e est l\u2019Argudell, conside\u0301re\u0301e comme \u00ab la meilleure pour produire de l\u2019huile en grande abondance \u00bb. La Corivell est assez testimoniale et la Verdal se distingue dans les huiles de Cadaque\u0301s. Pourtant, le Conseil re\u0301gulateur permet aux huiles qui contiennent e\u0301galement du jus d\u2019olives de la varie\u0301te\u0301 Arbequina plafonne\u0301 a\u0300 50 %, de be\u0301ne\u0301ficier de l\u2019AOP Oli de l\u2019Emporda\u0300.<\/p>\n

De ce co\u0302te\u0301 de la Me\u0301diterrane\u0301e, l\u2019utilisation de ll\u2019huile est intrinse\u0300que a\u0300 la culture du pays ; il y a toujours une bouteille d\u2019huile d\u2019olive sur la table ou un huilier, pour assaisonner la salade ou les le\u0301gumes, relever le gou\u0302t des viandes et poissons ou faire une sauce (sofregit).<\/p>\n
