Comme \u00ab mac\u0327ana \u00bb sur les Terres de l\u2019Ebre, ou \u00ab manzana \u00bb en espagnol, qui de\u0301rivent de \u00ab mattiana \u00bb, le nom d\u2019une varie\u0301te\u0301 de pomme qui pre\u0301dominait au cours de l\u2019empire romain.<\/h6>\n

Sans jamais disparai\u0302tre, la pomme certifie\u0301e par l\u2019Indication Ge\u0301ographique Prote\u0301ge\u0301e (IGP) Poma de Girona a vu le jour en 2001, succe\u0301dant au label de qualite\u0301 Poma de Girona agre\u0301e\u0301 par le gouvernement catalan, la Generalitat, en 1983. Tous les fruiticulteurs de l’IGP s\u2019engagent en faveur d\u2019une production inte\u0301gre\u0301e, suivant des me\u0301thodes de contro\u0302le des invasions plus durables et respectueuses de l’environnement.<\/p>\n

Les pommiers tro\u0302nent au milieu des paysages de l\u2019Alt et Baix Emporda\u0300, dans le Girone\u0300s, la Selva et le Pla de l\u2019Estany. Bien que les varie\u0301te\u0301s commerciales soient la Golden, la Red Delicious, la Royal Gala et la Granny Smith, plus d\u2019une centaine de varie\u0301te\u0301s ancestrales et locales a e\u0301te\u0301 re\u0301pertorie\u0301e et plante\u0301e. Toutes ces varie\u0301te\u0301s locales servaient a\u0300 e\u0301laborer un livre de recettes e\u0301toffe\u0301, a\u0300 base de ragou\u0302ts, ro\u0302tis, en accompagnement de la saucisse douce ou, plus particulie\u0300rement, pour farcir ou fourrer. Cette pomme est farcie d\u2019un ro\u0302ti d\u2019agneau, de veau et de porc, avec des biscuits, des e\u0301pices et du vin. Une ve\u0301ritable relique de la cuisine me\u0301die\u0301vale.<\/p>\n
