L\u2019AOP est la reconnaissance d’une culture traditionnelle qui a commence\u0301 au de\u0301but du XVIIIe sie\u0300cle, lorsque les nouvelles espe\u0300ces ame\u0301ricaines de le\u0301gumineuses, tre\u0300s productives, se sont impose\u0301es sur les terres volcaniques, le\u0301ge\u0300res, poreuses et fertiles, au point d\u2019emprunter les noms des espe\u0300ces anciennes appele\u0301es \u00ab fesols \u00bb. Les graines de \u00ab Phaseolus vulgaris \u00bb venus d\u2019Ame\u0301rique ont probablement de\u0301place\u0301 les varie\u0301te\u0301s ancestrales de \u00ab Vigna sinensis \u00bb (ou \u00ab Dolichos sinensis \u00bb), des haricots tre\u0300s longs, d\u2019origine eurasienne, certainement he\u0301rite\u0301s des anciens Grecs.<\/p>\n

En fait, aujourd\u2019hui, il y a encore des cultures locales de haricots, des fesolets, mongets, fesols menuts, fesoles, fesolins, fesolines, banyolins, escorxatites, caragirats, guixons, fesols de l\u2019ull ros ou fesols de l\u2019ull negre, surtout dans le Pla de l\u2019Estany et dans le Baix Emporda\u0300.<\/p>\n
