500 g de carbassa

\nFulles de fonoll<\/p>\n

Per a l\u2019escuma de recuit<\/strong><\/p>\n

75 g de recuit d\u2019olleta d\u2019ovella ripollesa GIRONA EXCEL\u00b7LENT
\n175 g de llet sencera d\u2019ovella GIRONA EXCEL\u00b7LENT
\n175 g de nata l\u00edquida amb el 35 % de mat\u00e8ria grassa
\n90 g de sucre
\n2 c\u00e0rregues de sif\u00f3 de crema<\/p>\n

Per a la gelatina de poma<\/strong><\/p>\n

2 pomes golden GIRONA EXCEL\u00b7LENT
\n1,5 g d\u2019agar-agar[\/vc_column_text][vc_column_text]PREPARACI\u00d3<\/strong><\/p>\n

  1. Per fer l\u2019escuma de recuit, barregeu la llet amb el recuit d\u2019olleta i acabeu-ho de mesclar b\u00e9 amb el t\u00farmix. Afegiu-hi la nata i barregeu-ho tot junt. Coleu-ho.<\/li>\n
  2. Aboqueu la mescla en un sif\u00f3 d\u20191 litre i poseu-hi 2 c\u00e0rregues. Deixeu refredar b\u00e9 el preparat un parell d\u2019hores a la nevera.<\/li>\n
  3. Per preparar la carbassa, peleu-la i talleu-la a talls regulars. Poseu-la a coure en una cassola amb l\u2019aigua i el sucre. Quan sigui tova, apagueu el foc i deixeu-la refredar en el mateix alm\u00edvar.<\/li>\n
  4. Per fer la gelatina de poma, liq\u00fceu les dues pomes i traieu-ne l\u2019escuma. Preneu 250 g de suc de poma i dissoleu-hi l\u2019agar-agar al foc. Feu que arrenqui el bull i apagueu el foc. Refredeu-ho. Quan sigui fred, tritureu-ho amb el t\u00farmix.<\/li>\n
  5. Per muntar les postres, poseu una base d\u2019escuma de recuit, tres talls de carbassa escorreguda, uns puntets de gelatina de poma i unes fulles de fonoll.<\/li>\n<\/ol>\n
