Les oliveraies sont des t\u00e9moignages vivants de l\u2019histoire. Certaines cultures sont mill\u00e9naires, avec des oliviers approchant ou d\u00e9passant les mille ans. Ces arbres sont impressionnants, \u00e0 la fois de par leurs dimensions robustes, pour tout ce qu\u2019ils ont vu passer et pour les g\u00e9n\u00e9rations d\u2019hommes et de femmes qui les ont travaill\u00e9s ou contempl\u00e9s.<\/h6>\n

Des milliers d\u2019oliviers sont aujourd\u2019hui centenaires. Et plusieurs milliers ont \u00e9t\u00e9 plant\u00e9s entre la fin du XXe si\u00e8cle et ces deux premi\u00e8res d\u00e9cennies du XXIe si\u00e8cle. Les g\u00e9n\u00e9rations pass\u00e9es ont effectu\u00e9 une s\u00e9lection des vari\u00e9t\u00e9s les mieux adapt\u00e9es au climat de la r\u00e9gion de G\u00e9rone, depuis la mer jusqu\u2019aux montagnes. R\u00e9sultat de toute cette \u00e9volution d\u2019oliveraies, d\u2019oliviers et d\u2019huiles, la D\u00e9nomination d\u2019origine prot\u00e9g\u00e9e (DOP) Oli de l\u2019Empord\u00e0 a \u00e9t\u00e9 cr\u00e9\u00e9e en 2008 pour distinguer trois vari\u00e9t\u00e9s d\u2019oliviers autochtones : l\u2019argudell<\/em>, le corivell<\/em> et le verdal<\/em> ou llei de Cadaqu\u00e9s<\/em>, issus uniquement d\u2019oliveraies de l\u2019Alt et du Baix Empord\u00e0, de trois communes du Pla de l\u2019Estany et de cinq du Giron\u00e8s.<\/p>\n

Le conseil de r\u00e9gulation permet \u00e9galement d\u2019\u00e9tiqueter comme DOP Oli de l\u2019Empord\u00e0 les huiles ne contenant pas plus de cinquante pour cent de la vari\u00e9t\u00e9 arbequina<\/em>, qui s\u2019est \u00e9galement bien adapt\u00e9e \u00e0 la r\u00e9gion. Cependant, l\u2019argudell<\/em> est la vari\u00e9t\u00e9 la plus cultiv\u00e9e et la plus caract\u00e9ristique, car elle donne des huiles d\u2019excellente qualit\u00e9. La vari\u00e9t\u00e9 corivell<\/em> est devenue r\u00e9siduelle. Et la vari\u00e9t\u00e9 verdal<\/em> donne de la personnalit\u00e9 aux huiles de Cadaqu\u00e9s.<\/p>\n

De la m\u00eame mani\u00e8re que la culture de l\u2019olivier se d\u00e9veloppe en marge de l\u2019appellation, avec des vari\u00e9t\u00e9s locales ou import\u00e9es, au cours des derni\u00e8res ann\u00e9es, la recherche et la passion pour le terroir ont fait r\u00e9appara\u00eetre d\u2019anciennes vari\u00e9t\u00e9s, certaines d\u00e9finitivement sauv\u00e9es ou sur le point de l\u2019\u00eatre, comme la salar d\u2019Arb\u00facies<\/em>, pr\u00e9sente depuis le massif du Montseny jusqu\u2019\u00e0 la Selva.<\/p>\n
