Les \u00e9leveurs ont souvent \u00e9t\u00e9 des bergers de transhumance depuis des temps imm\u00e9moriaux, \u00e0 la recherche des meilleurs p\u00e2turages des Pyr\u00e9n\u00e9es en \u00e9t\u00e9 et du climat plus doux des plaines en hiver. M\u00eame s\u2019il existe encore des troupeaux de transhumance de la plaine vers les Pyr\u00e9n\u00e9es, les animaux bougent moins. Seuls les ovins ont donn\u00e9 une race locale\u00a0: la <em>brebis ripollesa<\/em>. Les fromages affin\u00e9s sont en g\u00e9n\u00e9ral assez m\u00e9connus. Jusqu\u2019\u00e0 la fin du XXe si\u00e8cle et surtout au d\u00e9but du XIXe, la production de fromages se limitait aux r\u00e9gions montagneuses, du fait des contraintes de transport et de conservation. Comme l\u2019attestent les livres de recettes jusqu\u2019au XIXe si\u00e8cle, les fromages secs et affin\u00e9s \u00e9taient utilis\u00e9s en cuisine et \u00e9galement servis \u00e0 table. Elle cultive \u00e9galement 80\u00a0hectares de ray-grass, d\u2019orge, d\u2019avoine, de luzerne et de sorgo, avec lesquels elle nourrit ses vaches deux fois par jour\u00a0: tout d\u2019abord avec de l\u2019herbe fra\u00eechement coup\u00e9e, et ensuite, avec un m\u00e9lange de paille, d\u2019ensilage et de c\u00e9r\u00e9ales. Cela garantit un lait avec 60\u00a0% d\u2019acides gras de type om\u00e9ga, id\u00e9al pour \u00e9mulsionner, ce qui fait que de nombreux baristas l\u2019utilisent pour leur<em> coffee art<\/em>. La Selvatana ne produit que du lait entier, sans homog\u00e9n\u00e9iser la cr\u00e8me. Justement, sur la commune du Mas Marc\u00e8, cette m\u00e9thode traditionnelle de produire le <em>recuit<\/em> \u00e0 base lait de brebis et de pr\u00e9sure v\u00e9g\u00e9tale n\u2019a cess\u00e9 d\u2019exister.
