Depuis des temps imm\u00e9moriaux, les \u00e9leveurs de vaches, de brebis et de ch\u00e8vres ont souvent pratiqu\u00e9 la transhumance, cherchant les meilleurs p\u00e2turages des Pyr\u00e9n\u00e9es en \u00e9t\u00e9 et le climat plus doux de la plaine en hiver. Bien qu\u2019il existe encore des troupeaux qui transhument de la plaine aux Pyr\u00e9n\u00e9es, le cheptel est d\u00e9sormais plus stable. Cependant, seules les races ovines ont donn\u00e9 naissance \u00e0 une race indig\u00e8ne\u00a0: la brebis ripollesa. Les fromages affin\u00e9s sont, en g\u00e9n\u00e9ral, assez m\u00e9connus. Jusqu\u2019\u00e0 la fin du xxe si\u00e8cle et surtout au d\u00e9but du xxie, la production de fromages \u00e9tait confin\u00e9e aux r\u00e9gions montagneuses, en raison des imp\u00e9ratifs de transport et de conservation. Comme en t\u00e9moignent les livres de recettes et les livres de cuisine datant jusqu\u2019au xixe si\u00e8cle, les fromages secs et affin\u00e9s \u00e9taient utilis\u00e9s en cuisine et \u00e9galement servis \u00e0 table. Bien que les fromages de haute montagne fussent connus sous le nom de <em>serrat<\/em>, aucun d\u2019entre eux ne portait un nom sp\u00e9cifique ou une appellation faisant r\u00e9f\u00e9rence \u00e0 un lieu.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">La culture et l\u2019industrie fromag\u00e8re se sont d\u00e9velopp\u00e9es gr\u00e2ce \u00e0 une plus grande sensibilisation du public \u00e0 l\u2019environnement et au milieu rural, ainsi qu\u2019aux pratiques agricoles durables et socialement engag\u00e9es. Engag\u00e9s dans une agriculture r\u00e9g\u00e9n\u00e9ratrice, dans le plus grand respect des animaux et de la terre, ils pratiquent un syst\u00e8me de p\u00e2turage tournant avec des parcelles et des couloirs clos, qu\u2019ils ouvrent et ferment selon les besoins du b\u00e9tail et du sol, fertilis\u00e9 par le passage des brebis. Plus tard, il a vendu ses ch\u00e8vres et a commenc\u00e9 \u00e0 travailler le lait de vache, et actuellement, il en fait \u00e9galement avec du lait de ch\u00e8vre et de brebis. Lui et Merc\u00e8 Navarra ont eu des jumeaux en 1988. Les fr\u00e8res Jordi et Oriol, qui se sont engag\u00e9s en faveur de la production biologique et du d\u00e9veloppement durable, commercialisent leur yaourt de brebis, fabriqu\u00e9 uniquement \u00e0 partir de lait de brebis pasteuris\u00e9, de ferments lactiques et rien d\u2019autre.
