Trois vari\u00e9t\u00e9s autochtones d\u2019oliviers\u00a0: l\u2019argudell<\/em>, le corivell<\/em> et le verdal, <\/em>ou llei<\/em> de Cadaqu\u00e9s, sont \u00e0 la base de l\u2019AOP Oli de l\u2019Empord\u00e0. La culture de l\u2019olivier a plus de 2\u00a0000 ans d\u2019histoire. Ainsi l\u2019attestent certains vestiges remontant \u00e0 l\u2019\u00e2ge du bronze, mais ce n\u2019est qu\u2019\u00e0 partir du vie si\u00e8cle avant J\u00e9sus-Christ, apr\u00e8s la colonisation grecque, que le paysage actuel d\u2019oliviers de l\u2019Alt Empord\u00e0 est apparu, \u00e0 l\u2019image des oliveraies situ\u00e9es au pied du mont Parnasse.<\/h6>\n

M\u00eame si aucun olivier n\u2019a \u00e9t\u00e9 formellement identifi\u00e9 comme ayant plus de mille ans, cette r\u00e9gion peut se vanter de la pr\u00e9sence d\u2019oliviers mill\u00e9naires et centenaires. L\u2019huile de ces oliviers mill\u00e9naires n\u2019est ni meilleure ni pire que les autres huiles, mais elle porte en elle le poids de l\u2019histoire comme un atout suppl\u00e9mentaire\u00a0: des oliviers qui ont \u00e9t\u00e9 t\u00e9moins de grands exploits, de batailles tragiques et d\u2019invasions perfides.<\/p>\n

Bien que l\u2019AOP Oli de l\u2019Empord\u00e0, n\u00e9e en 2008, couvre un territoire tr\u00e8s r\u00e9put\u00e9, l\u2019Alt et le Baix Empord\u00e0, trois communes du Pla de l\u2019Estany et cinq du Giron\u00e8s, dans des comarques comme La Selva ou La Garrotxa, conservent encore de nombreuses oliveraies, dont certaines ont \u00e9t\u00e9 sauv\u00e9es et remises en production.<\/p>\n

En dehors du cadre de l\u2019AOP, des exp\u00e9riences ont \u00e9t\u00e9 men\u00e9es avec des vari\u00e9t\u00e9s \u00e0 la mode et sur de nouveaux territoires. Le conseil de r\u00e9glementation autorise \u00e9galement l\u2019appellation AOP Oli de l\u2019Empord\u00e0 pour les huiles contenant au maximum cinquante pour cent de la vari\u00e9t\u00e9 arbequina<\/em>, qui s\u2019est elle aussi extraordinairement bien adapt\u00e9e au territoire. Aujourd\u2019hui, la culture de l\u2019olivier est \u00e9galement d\u2019une grande importance environnementale, car elle pr\u00e9sente notamment l\u2019avantage de servir de coupe-feu \u00e0 des p\u00e9riodes comme celle que nous connaissons actuellement, o\u00f9 le risque d\u2019incendie est \u00e9lev\u00e9 en raison du changement climatique.<\/p>\n
